Could you leave just a little more of the good fat on?
Did you purchase the grain finished or alfalfa? The alfalfa is leaner with only a 90/10. Grain is 80/20. Our butcher has a standard process for cuts so I would suggest if your purchase was the alfalfa ribeye that you try the grain finished next, for more fat. The Ribeye is perfectly cut… not too thick and not too thin. The ratio of the fat is also perfect it will compliment for any preparation - not too dry or too juicy. We should feel privileged to have access to such high quality and thanks to the Barreras family for their vision and mission to provide this to our community.
