Steak and Quail Egg Breakfast Skillet

Yield- 2 servings
Prep/Cook Time- 30 minutes
Ingredients:
Potatoes- 1 ½ Pounds, peeled and small diced
Olive Oil- 3 Tbsp
Onion- ½ of a yellow
Garlic Powder- ½ tsp
Salt and Pepper- To taste
Fresh Parsley- ¼ Cup, chopped
Steak of your choice- 1 Pound, cooked to your desired doneness and sliced thin
Directions:
- Cook the potatoes in a pot of boiling water for 5 minutes. Drain.
- Heat the oil in a skillet over medium heat.
- Add the potatoes to the skillet in a single flat layer and cook without stirring for about 4-5 minutes.
- Add the onion, garlic powder, salt and pepper and continue to saute for about 7 minutes or until the potatoes have browned on all sides.
- Remove from heat, adjust salt and pepper, and add the parsley.
- In a separate saute pan, over medium heat, crack and fry the quail eggs until all of the egg white has set firmly.
- Add in the cooked, and sliced steak in the potato skillet and top the dish with the finished quail eggs. Enjoy!
