Oven Roasted Parmesan Red Potatoes with Bacon
This crowd pleasing side dish will be a hit to any steak, pork chop, or chicken meal.

Ingredients
Red Potatoes
- 1 pound
- 1 pound
Parmesan Cheese
- 1⁄2 Cup
Herb de Provence
- 2 Tablespoons
Salt and Pepper
- To taste
Fresh Parsley, Chopped
- 1⁄2 Cup
Garlic
- 2 Cloves, Smashed and Minced
Directions
- Preheat the oven to 400 degrees F.
- Half or quarter the potatoes and place them in a bowl. Add cold water to the bowl just to cover the potatoes.
- In a skillet, cook the bacon until the bacon is halfway cooked. Remove the bacon from the pan and set aside. At this stage, we are only after the bacon grease that is left in the pan.
- Drain the potatoes from the water and place them in a large mixing bowl. Add salt and pepper to he potatoes according to your liking.
- Add in the Herb de Provence, you can use Italian seasoning if you don't have Herb de Provence.
- Mix the ingredients in the bowl well and set aside.
- Line a small cookie sheet with aluminum foil and arrange the potatoes in a single layer on the cookie sheet.
- Place in the oven and cook them for 15-20 minutes.
- In the meantime, cut up the bacon into pieces and put it in a bowl. Add the Garlic to the bacon and mix well.
- Once the potatoes are just fork tender, remove them from the oven.
- Add the potatoes to the bacon and garlic mixture along with the parmesan cheese. Toss well and pour the potatoes back on the cookie sheet.
- Place the cookie sheet back in the oven and continue to cook until the potatoes and cheese start to brown, about 10 minutes.
- Remove the potatoes from the oven and garnish them with the freshly cut parsley. Adjust salt and pepper if needed. Enjoy!
