Cheesy Ham and Egg Pie 



3 Tbsp Olive Oil 

1 Cup of Onion, finely chopped 

12 Large Eggs 

1 Tsp Kosher Salt 

½ Tsp Cracked Black Pepper 

½ Cup Bell Pepper, finely chopped 

2 Cups Ham, finely chopped  Buy Barreras Family Farm Pasture Raised Ham

½ Cup Milk 

1 Cup Cheddar Cheese, shredded 

1 Cup Provolone Cheese, shredded 

½ Cup Fresh Parsley, chopped 

½ Cup Tomato, diced (optional) 



  • Preheat the oven to 400 degrees. 
  • Spray an 8 inch skillet with cooking spray and heat the olive oil over medium heat on the stove until the oil is hot. Saute the onions and peppers for about 5 minutes. â—Ź In a bowl, whisk together the salt and pepper, milk and eggs. Set aside. â—Ź Once the peppers and onions have been sauteed for 5 minutes, add the ham and continue to saute for 2 more minutes. 
  • Pour the egg and milk mixture into the skillet. Cool for around 4 minutes, pushing down the sides of the skillet with a spatula to prevent the egg from sticking. 
  • Top the egg with the cheeses and parsley. 
  • Place the skillet in the preheated oven and cook until the egg has completely firmed up, the cheese has melted and has browned nicely. 
  • Remove from the oven and set aside to cool slightly. 
  • Garnish with the freshly diced tomato. Slice and serve. Enjoy!
