Cheesy Ham and Egg PieÂ

Ingredients:
3 Tbsp Olive OilÂ
1 Cup of Onion, finely choppedÂ
12 Large EggsÂ
1 Tsp Kosher SaltÂ
½ Tsp Cracked Black PepperÂ
½ Cup Bell Pepper, finely choppedÂ
2 Cups Ham, finely chopped  Buy Barreras Family Farm Pasture Raised Ham
½ Cup MilkÂ
1 Cup Cheddar Cheese, shreddedÂ
1 Cup Provolone Cheese, shreddedÂ
½ Cup Fresh Parsley, choppedÂ
½ Cup Tomato, diced (optional)Â

Directions:
- Preheat the oven to 400 degrees.Â
- Spray an 8 inch skillet with cooking spray and heat the olive oil over medium heat on the stove until the oil is hot. Saute the onions and peppers for about 5 minutes. â—Ź In a bowl, whisk together the salt and pepper, milk and eggs. Set aside. â—Ź Once the peppers and onions have been sauteed for 5 minutes, add the ham and continue to saute for 2 more minutes.Â
- Pour the egg and milk mixture into the skillet. Cool for around 4 minutes, pushing down the sides of the skillet with a spatula to prevent the egg from sticking.Â
- Top the egg with the cheeses and parsley.Â
- Place the skillet in the preheated oven and cook until the egg has completely firmed up, the cheese has melted and has browned nicely.Â
- Remove from the oven and set aside to cool slightly.Â
- Garnish with the freshly diced tomato. Slice and serve. Enjoy!Â
