Caramelized Onion & Steak Quesadilla

Fast, easy and scrumptious! These Caramelized Onion & Steak Quesadillas are perfect for busy summer days.

Ingredients
6 oz of your favorite steak (skirt, flank, filets, or sirloins work wonderful for this recipe)
2 tortillas
2 Tbsp Butter
1 cup shredded Colby jack & cheddar cheese
Salt & Pepper
1/2 red onion, diced

Directions
1. Heat a griddle pan to 350 degrees. Add 1 Tbsp Butter to the griddle and saute the diced onion until they are golden brown. Remove from heat.
2. Season steak generously with salt and pepper and cook the steak on the griddle until it has reached your desired doneness. I recommend medium rare. Remove from heat.
3. Add the remaining Tbsp of Butter to the griddle and add the tortillas. Move the tortilla around the butter until they are nicely coated. Add 1/2 cup of the cheese to each tortilla as well as the carmalized onions.
4. Thinly slice your steak and arrange it on one of the tortillas. Cook until they are nicely browned, about 4 minutes, and all of the cheese has melted. Flip one tortilla on top of the other. Remove from the heat and slice into quarters. Serve with Cumin & Lemon Sour Cream Sauce.
