Braised Kale and Chard

Prep/Cook Time- 30 min

Yield- 8 servings



1/2 lb chopped kale

1/2 lb chopped chard

1/2 lb chopped bacon

1 medium onion, chopped fine

3 cloves of garlic, minced

1 tsp lemon zest

1/4 tsp red pepper flakes

1/2 tsp kosher salt

1/2 tsp pepper

1 Tbsp lemon juice



1. In a large saute pan over medium high heat, cook the bacon until it reaches your desired doneness. I like mine a little chewy so I cook it for about 5-7 minutes. Turn off the heat. Using a slotted spoon, remove the bacon bites and drain on a paper towel. 

2. Turn the store to medium heat and add the onion. Saute the onion in the bacon grease until it becomes transparent, about 3 minutes. Add the garlic, salt, pepper, and chili flakes. Continue to cook for 2 minutes. 

3. Add the kale and chard and turn the store down to medium low. Stir every few minutes for the next ten minutes. Once the greens have wilted and become tender, add the bacon, lemon zest, and lemon juice. Stir to combine and adjust salt and pepper to your liking. Enjoy!
