1 pound Fingerling Potatoes
2 tbsp Salt
1 cup Parmesan Cheese
1 pound Bacon Sliced, cut in half
Place potatoes in a stock pot and cover them with water. Add the salt. Bring the potatoes to a boil and cook until they are fork tender, about 8-10 minutes. Strain them and place them on a cookie sheet. Put them in the refrigerator to cool completely.
Preheat the oven to 375 degrees.
Remove the cooled potatoes from the refrigerator and roll them in the parmesan cheese to coat them.
Wrap each potato with a half slice of bacon and arrange them on the cookie sheet, evenly spaced.
Bake them in the preheated oven until the bacon becomes brown and crispy, 15-20 minutes. Serve with your favorite dipping sauce.
